This is a greener, leafier high mountain oolong, with nice milkiness and gentle sweetness. Not as bold as some, I've saved this Shanlinxi for the summer menu, where its crisper, greener character can shine as a perfect compliment for warm sunny days. Citrus notes graciously unfold in mid steeps with gongfu cha.
Tasting notes:
Nose: fresh cut grass, roasted carrot, asparagus
Flavors: radish, spring onion, braised fennel
Character: Buttery notes, with flavors that enhance as it cools. Mild tannins, with a clean finish.
